Kashmiri Gustaba ( Indian / Lamb/Mutton )

Ingredients:
400 g mutton
2 tsp cayenne (use less if you want it less spicy)
2 tsp fennel seed powder
1 tsp ginger powder
1 tsp coriander powder
2 tsp garam masala
juice of 2 lemons
5 tbsp milk powder
2 tbsp ghee
1 tsp sugar
1 cup fresh milk

Method:
Knead well minced meat, cayenne, fennel, ginger, coriander, and 1 tsp garam masala. Add juice of half lemon, 1 tbsp milk powder and ghii to make a smooth paste. Form into balls about 2 inches in diameter. Heat remaining ghee in a pan. Add sugar, lemon juice, milk powder, garam masala and salt to taste. Pour in the fresh milk, add the koftas, and simmer until the liquid evaporates and the koftas are very tender.
