Ingredients:250 g sweet potatoes, peeled and cut into bite size pieces
1 onion, peeled and chopped
2 cloves garlic, chopped
1 tsp gound coriander
1 tsp cumin
1 green chilli, chopped
400 g canned tomatoes
410 g pinto beans, drained and rinsed
125 g green beans
2 big marrows, cut into bite size pieces
Chopped fresh coriander, handful
Yoghurt, harissa and coucous, to serve |
Sweet Potato and Bean Couscous ( Vegetarian )

Method:
- Fry onion and garlic in oil until a lght brown. Add the pices and fry for about a minute, stirring constantly. Add canned tomatoes and about 125 ml water with the sweet potatoes. Cover and cook on low fire until the potatoes are done.
- Add beans, marrows and half the coriander. Cook for about five minutes.
- Add salt, remaining coriander and a spoonful of harissa. Cook for a minute and take off.
- Serve with couscous, yoghurt and more harissa.
