Tomato Salad( Salads / Vegetarian )
Ingredients:
2 avocados
2 large tomatoes, peeled
1 lettuce, coarsely shredded
2 tbsp chopped, fresh coriander
salt and pepper to taste
3 tbsp olive oil
2 tbsp fresh lemon juice
Method:
Cut the avocados in half, remove stones and peel skin. Cut the avocados and tomatoes lengthwise. Arrange a bed of lettuce on a pltatter and place the tomatoes on top. Arrange th avocados over the tomatoes and sprinkle coriander. Sprinkle salt and pepper. Whisk olive oil and lemon juice together. Drizzle a little over the salad and serve the rest seperately with the salad.
