BRAISED BEEF TIPS WITH VEGETABLES
*My personal favorite*

      2  T  Oil
 1 1/2  pounds  Beef Tips in 1 1/2-inch cubes
      2  Onions, thinly sliced
      1  C  Water
      1  Apple, pared, cored, and thinly sliced
      2  1-pound cans Tomatoes
      2  tsp  Sugar
      2  tsp  Salt
   1/8  tsp  Pepper
      8  Carrots, sliced diagonally
      1  head Cabbage cut in wedges (1 1/2 pounds)


Heat oil in a large skillet; add beef and brown on all sides.
Remove.
Add onions and cook slowly until golden brown.
Add beef.
Stir in 1 cup water.
Add apple and tomatoes,
then sprinkle with sugar, salt, and pepper.
Bring to a boil,
reduce heat, cover, and simmer for 2 hours.
Add carrots and cabbage to meat mixture, cover and simmer for about 20 minutes.
Yield: 4 servings, this is more like a hearty soup, and the beef is unbelieveably tender.
