STUFFED BAKED POTATOES

4 large baking Potatoes
1 C Cottage Cheese
1 1/2 tsp Salt
1/8 tsp Pepper
3 T Butter
3 T Milk
Bake potatoes at 375 degrees Fahrenheit for 1 hour.
Cut potatoes in half and scoop potato out of skins.
Reserve skins as a shell.
In a large mixing bowl, combine potato, cheese, salt, pepper, and butter.
Beat until fluffy, adding enough milk for desired consistency.
Fill shells and place on baking sheet.
Bake at 400 degrees Fahrenheit for 12 to 15 minutes or until hot.
Yield: 8 servings
