MUFFINS AND BISCUITS
CHEDDAR CHEESE MUFFINS
1/3 cup melted margarine
1 1/2 cups flour
1/2 cup sugar
1 egg
2 1/2 t. baking powder
3/4 cup milk
salt
Mix all together and add
1 1/4 cups grated cheddar cheese (old is the best).
Sprinkle 1/4 cup cheese over the top of the muffins. Bake at 375 for 17-20 minutes.
BLUEBERRY LEMON MUFFINS
2 cups flour
1/2 cup sugar
1/2 t. salt
rind of 1 large lemon
3 t. baking powder
1 egg
1 cup milk
1/2 cup butter, melted
1 1/4 cup blueberries
Mix flour, sugar, baking powder, salt and lemon rind.
Beat egg and add milk and margarine.
Add egg mixture to dry ingredients until batter is lumpy. Bake at 425 approximately 20 minutes.
While muffins are still hot, mix
1/3 cup melted butter
1 T. lemon juice
Dip top of each muffin in this mixture, then in sugar.
Makes 12 muffins.
JOCELYN'S BISCUITS
2 cups flour
2 T. sugar
1 T. baking powder
1/2 t. soda
1/2 t. salt
Mix together and add:
1 cup plain yogurt
1 t. lemon juice
Drop by spoonful and bake at 400 for 10-12 minutes.
Makes about 12
Delicious with homemade jam.
