Alaska Salmon Bake with Pecan Crunch Crust

2 T. Dijon mustard
2 T. unsalted butter, melted
1 T. PLUS 1 t. honey
1/4 cup EACH: bread crumbs; finely chopped pecans OR walnuts
2 t. chopped fresh parsley
4 6-oz. salmon fillets
1 lemon, cut into wedges
Salt AND pepper to taste
Preheat oven to 450º. Mix mustard, butter and honey in a bowl; set aside. In another bowl, mix bread crumbs, pecans and parsley. Season salmon with salt and pepper to
taste; place on an ungreased baking sheet or broiling pan. Brush each fillet with
mustard-honey mixture and top with a spoonful of crumb coating. Bake 10 min. per inch of thickness or until salmon flakes when tested with a fork. Serve with lemon wedges.
