Amaretto Chicken

4 8 oz. chicken breast boneless, skinless
1/4 c peanut oil
1/4 t garlic powder
1/4 t curry powder
1/2 lb. mushroom sliced
1/3 c amaretto liqueur
1 T. lemon juice fresh squeezed
1/2 t. lemon peel
1 can chicken broth low sodium & low fat
1 T. cornstarch
Cut chicken into 1" wide strips and sprinkle with pepper,
garlic powder and curry powder mixture. Roll strips in flour.
Heat peanut oil in large skillet; brown chicken pieces on
all sides. Add mushrooms, amaretto, grated lemon peel and
juice. Cover; simmer for 5 min.
Mix chicken broth and cornstarch. Stir mixture into
skillet; continue stirring over low heat until mixture
bubbles and thickens. Serve over rice or noodles.
