Appleton Chicken

1/2 c. finely chopped onion
2 cloves garlic, minced
2 T. cooking oil
1 (14 oz.) Can whole peeled tomatoes, finely cup up
1/4 c. vinegar
2 T. brown sugar
1/2 t. dried tarragon, crushed
1/4 t. ground red pepper
1/8 t. pepper
1 (8 oz)can unsweetened applesauce
6 chicken legs


For sauce: in a med. Saucepan on the range top, cook
onion & garlic in cooking oil till onion is tender but not
brown. Stir in undrained tomatoes, vinegar, brown sugar,
tarragon, red pepper and pepper. Bring to boiling; reduce
heat. Boil gently, uncovered, for 25-30 min or to desired
consistency, stirring occasionally Stir in applesauce; heat
through. Set sauce aside.

Grill chicken in a covered grill, directly over med coals for
15 min. Turn & grill for 15-25 min more or till tender,
brushing often with sauce during the last 10 min. Of
grilling. Heat any remaining sauce on the side of the grill
to pass with the chicken. Makes 6 servings.
