Butterscotch Bread
This recipe created by Land O'Lakes.
Two loaves of nut-rich, golden quick bread, one to serve,
one to save - or give.
Prep: 20 min Bake: 40 min
4 cups all-purpose flour
2 cups firmly packed brown sugar
2 cups buttermilk*
2 eggs
3 tablespoons LAND O LAKESŪ Butter, melted
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup golden raisins or chopped nuts
Heat oven to 350°F. Grease bottoms only of two 9x5-inch loaf
pans. Set aside.
Combine all ingredients except raisins in large mixer bowl.
Beat at low speed, scraping bowl often, until well mixed (2 to
3 minutes). Stir in raisins by hand.
Spoon batter evenly into prepared loaf pans. Bake for 40 to 50
minutes or until toothpick inserted in center comes out clean.
Let stand 10 minutes. Remove from pans. Cool completely.
*Substitute 2 tablespoons vinegar and enough milk to equal 2 cups.
Makes 2 loaves (24 servings)
