CHEESE SCONES

6 oz flour (if using plain add 2 tsp baking powder)
1oz butter
Pinch mustard
2-3oz grated cheese
Salt and pepper seasoning
Milk to mix
Sieve flour, baking powder and good pinch of salt, pepper and mustard. Rub in butter, add cheese and enough milk to make soft rolling consistency. Roll out to about 1/2-3/4" thick. Cut into desired shapes and bake on lightly greased tins for about 10 mins at 475° When cooked, split and butter and/or jam.
