Chicken Cacciatore

· 1/3 cup grated Parmesan Cheese
· ¼ cup milk
· 1 egg
· 2 tablespoons butter, melted
· 8 ounces spaghetti, cooked
· 6 boneless skinless chicken breasts, cut into 1" pieces
· 1/3 cup all-purpose flour
· 2-4 tablespoons vegetable oil
· ½ cup chopped onion
· 1 tablespoon vegetable oil
· ¼ pound sliced mushrooms
· 15 ½ ounce jar marinara sauce
· 4 ounces ham, cut into strips
· ½ cup chicken broth
· 1 tablespoon basil leaves
· ¼ teaspoon oregano
· Parmesan and mozzarella cheese for top
Grease 2-½ quart casserole. In a large bowl, beat cheese, egg, butter and
milk until blended. Toss with spaghetti and put in dish. Coat chicken with
flour and cook in oil on medium-high heat until done. On medium heat, sauté
onion 1-2 minutes, and then add mushrooms for 1 more minute. Add marinara,
chicken, ham, broth, and spices, and cook 10 minutes. Spoon over spaghetti
mixture. Sprinkle with cheese. Bake, uncovered, at 350º for 30-40 minutes.
