Chicken Casserole

·       2 to 3 cups cooked cubed chicken
·       1 cup celery, chopped finely
·       1 cup cooked rice
·       ¾ cup mayonnaise
·       1 can cream of mushroom soup
·       3 boiled eggs, diced
·       1 teaspoon lemon juice
·       1 teaspoon salt
·       1 teaspoon onion,chopped
Topping
·       ¼ cup melted margarine
·       1 cup crumbled cornflake crumbs
·       ½ cup grated cheese


Mix chicken, celery, rice, mayonnaise, soup, eggs, lemon juice, salt and
onion.  Coat a 9 x13” baking dish with cooking spray and spread this mixture
in pan.  Mix topping ingredients and sprinkle over top.  Bake at 350º for 35
minutes.
