Chicken-N-Rice

My favorite comfort food.--Suzanne Zick

· About 2 pounds chicken
· 3 ½ quarts water
· 4 chicken bouillon cubes
· 3 tablespoons of butter
· 1 ½ cups onions, chopped
· 1 ½ sticks celery, chopped
· Seasonings of your choice
· ½ cup rice


Boil chicken until tender. Remove chicken, add water to equal 3 ½ quarts
again. Pull chicken meat from bone and return to broth. Bring to a boil,
then turn to medium heat and cook for 45 minutes. Add remaining ingredients
and cook for 45 minutes on low.

Chicken and Rice Bake

·       1 can cream of chicken and broccoli soup
·       1 ½ cup water
·       ¾ cup uncooked rice
·       1 ½ cup sliced mushrooms
·       1 can (2.8 ounces) French fried onions
·       4 chicken breasts
·       Paprika and pepper to taste

In 3 quart baking dish, combine first 4 ingredients and ½ can onions. 
Arrange chicken on top and sprinkle with spices.  Bake at 375º for one hour. 
Top with remaining onions.  Bake 3 more minutes or until onions are brown.

Chicken Rice

Serving Size  : 6     
 

 2               cups  cooked chicken -- cubed
 1                box  Uncle Ben's fast-cooking long grain & wild
                       rice
 1                can  cream of mushroom soup, condensed
    1/2           cup  2% low-fat milk


Preheat oven to 350 degrees F.

Mix all ingredients in greased 2-quart baking dish.

Cover and bake.
