CHOCOLATE BOURBON MUFFINS

3/4 cup flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/2 cup softened lightly salted butter or margarine
1 egg
1 square (1oz) melted semisweet chocolate
1 Tbsp bourbon,
1 tsp vanilla
1/2 cup semisweet chocolate chips
1/2 cup chopped pecans


Preheat oven to 400F, prepare pans. In a bowl mix first three ingredients.
In another bowl cream butter & sugar until light & fluffy, beat in chocolate,
egg, bourbon & vanilla. Add dry mix to wet mix until just combined, stir in
chips & nuts. Spoon into pans & bake for 15-20 mins or until done. Makes 9.
These muffins freeze well.
