Chocolate Pudding

Serving Size: 4
3 tablespoons cornstarch
2 cups half and half or cream or milk
2/3 cup sugar
1/2 cup cocoa
pinch salt
1/3 cup hot water
1 teaspoon vanilla
Place cornstarch in bowl. Whisk in 1/4 cup cream until smooth. Reserve.
Stir sugar with cocoa and salt in a saucepan. Whisk in water until smooth. Set pan over medium heat and cook, stirring constantly, for 3 to 4 minutes or until mixture comes to a boil. Stir in remaining cream.
Stir reserved cornstarch mixture, and whisking constantly, add to chocolate mixture. Place mixture over medium-low heat and cook, stirring constantly, for about 5 minutes or until mixture comes to a simmer and is thickened. Stir in vanilla; cover with plastic wrap touching the surface of the pudding. Cool to room temperature.

Notes: To make fudgesicles: Divide pudding equally between cups in popsicle tray or 9 small paper cups. Stand sticks or spoons in pudding and place in freezer. Freeze for at least one hour or until frozen through. Makes 9 fudgesicles.
