Confetti Casserole

1 lb Ground beef
1/4 c Chopped onion
1/4 c Chopped Green Pepper
1/4 t. Dry mustard
4 oz Cream cheese
8 oz Tomato sauce
10 oz. pk Frozen mixed vegetables, -thawed
1 t. Salt
1/8 t. Pepper
Crushed corn chips OR crushed potato chips OR crushed
Ritz crackers OR dry bread crumbs--your choice!
Enough to cover the top of the casserole before you
put it in the oven.
Brown meat in a skillet, add onion and green pepper
and cook until tender. Add salt, pepper, dry mustard,
and cream cheese; stir until cheese melts.
Add tomato sauce and defrosted vegetables. Turn into
1 1/2 qt. casserole.
Sprinkle with desired topping (see above). Cover with
foil and bake in moderate oven (375 degrees) 40
minutes. Uncover and bake 10 minutes longer.
VARIATION NOTE: You can replace the 1 lb. ground beef
with 1 lb. cooked chicken.
