Reuben Meatloaf

Yield: 4 servings

1 lb ground beef, crumbled
1 c breadcrumbs; soft, preferably from rye bread
1/2 c thousand island dressing
1 egg
1/2 ts caraway seed (optional)
1 ts pepper
filling:
1 cn sauerkraut; 8 oz
1 oz corned beef (from can), chop
1/2 c cheese; swiss, shredded


Combine all meat mixture ingredients in
medium bowl. Press 1/2 of mixture in bottom of loaf
pan. Make slight indentation, lengthwise down centre
of meat loaf. Combine all filling mixture and put in
indentation. Top with remaining meat mixture, pressing
to enclose filling and sealing edges. Cook at HIGH
(100%) 13-18 minutes or till firm and temperature is
145F. Let stand covered for 5 minutes.

Beef Apple Meatloaf

1 1/2 lbs. ground beef
1 large egg
1/4 c. whole milk
3/4 c. fine bread crumbs
1/4 large onion, diced
Salt and pepper to taste
2 medium apples, grated
1/2  T. nutmeg


Preheat oven to 350 degrees. Mix all ingredients.  Bake until done.  Let sit for at
least 15 min.before serving.

Southwestern-Style Nacho Meatloaf

      1 c  tomato salsa, lightly drain
    3/4 c  finely crushed tortilla chip
      1    egg
      1 sm onion, chopped
      1    garlic clove, minced
      1 sm fresh green chili,seeded and
           - minced
    1/8 ts crushed hot red pepper
      1 tb chili powder
      1 ts salt
    1/2 ts ground cumin
  1 1/2 lb ground chuck
    1/2 c  shredded sharp cheddar cheese


1. Preheat oven to 375 F. In a medium bowl, combine
salsa, tortilla chips, egg, onion, garlic, chile,
chili powder, salt and cumin. Stir with a fork until
mixed. Add the ground chuck and mix until blended.
2. Pack mixture into a 8x4x2-1/2 inch loaf pan.
Place on baking sheet and bake, uncovered, until a
meat thermometer inserted in center of loaf reads
160-165 F, about 1 hour. Sprinkle Cheddar over top of
loaf and cake until cheese is melted, about 3 minutes.
Let stand 5 minutes before slicing.
