Meetinghouse Stuffed Peppers

4 med. Bell peppers
½ c. walnuts
1/4 c. each ketchup & 1% low fat milk
2 large eggs
2 med. Cloves garlic
2 tsp. Chili powder
3/4 t. each onions & salt
1 ½ c. uncooked old fashioned or quick oats
1 can (11 oz) vacuum packed corn kernels
3/4 c. thinly sliced scallions
Heat oven to 350 degrees F. Have a 13X9" baking dish
ready. Put pepper halves in a 4 qt. pot. Add water to cover;
cover pot & bring to a boil. Reduce heat; boil gently 10 min,
or until peppers are barely tender. Drain, inverted in
colander.
In a blender or food processor, process walnuts, ketchup,
milk, eggs, garlic and seasonings until walnuts are ground.
Stir in oats, corn with liquid and scallions.
Arrange peppers in baking dish. Stuff with oat mixture.
Bake, uncovered, 30 min. Until tender & center registers 160
degrees F on an instant read thermometer.
