Packinghouse Strawberry Pie

3 egg whites
1/2 teaspoon baking powder
1 cup sugar
10 single saltine crackers -- crushed
1/2 cup finely chopped pecans
1 quart fresh strawberries -- hulled, cleaned and sliced
1/2 pint whipping cream -- sweetened and whipped (DO NOT use
nondairy topping)
Preheat oven to 300ºF.
Put egg whites into a large mixing bowl and using an electric mixer, beat
egg whites with baking powder until stiff, gradually adding sugar. Set
aside.
Fold crushed crackers and pecans into beaten egg whites.
Pour into well-buttered 10 to 11 inch pie plate. Shape with spatula to
conform to shape of pie plate. (Like a crust.)
Bake for 30 minutes.
Cool completely.
Top with strawberries and garnish with whipped cream.
CLAUDINE'S NOTES: I would sweeten the fresh strawberries with a little
sugar, as they can be rather tart. However, if you are lucky enough to get
really ripe and sweet strawberries, then the extra sugar would not be
necessary.
I have also taken the liberty to clarify some of the directions, so they
would be easier to understand.
