Hot German Potato Salad

2 med. potatoes
3 slices bacon
1/3 c. onion, chopped
1 tbs. flour
2-3 tsp. sugar
3/4 tsp. salt
1/4 tsp. celery seeds
dash of pepper
1/3 c. water
3 tbs. vinegar
Boil potatoes in their jackets. Peel and slice thinly.
Fry bacon slowly in skillet.
Drain on absorbent paper; crumble.
Saute onion in bacon fat until golden brown.
Blend in flour and seasonings.
Cook over low heat, stirring until smooth and bubbly.
Remove from heat.
Stir in water and vinegar.
Bring to boil, stirring constantly.
Boil 1 minute.
Stir potatoes and crumbled bits of bacon in carefully.
Remove from heat; cover and let stand until ready to serve.
2 generous servings.

Spicy Potato Salad

1/2 lb. small red potatoes, scrubbed
1 clove garlic, minced
3/4 tsp. sweet paprika
1/8 tsp. cayenne
1/2 tsp. ground cumin
1/2 tsp. ground coriander
1/4 tsp. white pepper
1 tbs. olive oil
2 tbs. plus 2 tsp. scallions, chopped
2 tbs. cilantro or parsley, chopped
1/4 c shredded fat-free cheddar cheese
Put potatoes in boiling water. Cover saucepan and cook 15-20
minutes or until just tender. Drain and rinse under cold water
to cool. Cut potatoes into 1/4 inch slices and place in a mixing
bowl. Combine next 6 ingredients in a bowl. Heat oil in a
nonstick skillet over medium heat. Stir in spice mixture and cook
about 15 seconds, stirring constantly. Pour hot spice mixture
over potatoes and toss. Add remaining ingredients and salt to
taste and toss. Serve at room temperature or chilled.
