RAW APPLE CAKE

1 1/2 c Oil
2 c Sugar
4 Raw apples, chopped
3 Eggs
1 c Pecans
1 ts Cinnamon
1 ts Vanilla
3 c Self rising flour
Topping
1 c Sugar
1 Stick of margarine
1 cn Condensed milk
1 ts Vanilla


Mix all ingredients together until well blended. Pour into a greased
9x13 inch pan and bake at 300 degrees fro 1 hour. Topping: Mix in a
saucepan and cook until thick. Remove cake from oven and cut into
squares while still hot. Pour topping over hot cake and let cool.

Apple Cake Old Fashioned

Serves 8 - Bon Appetit May 90

1 ½ c. plus 2 T. whole wheat flour
5 t. cornstarch
2 1/4 t. baking soda
3/4 t. salt
1/8 t. ground cloves
½ c. (1 stick) unsalted butter, diced, room temp
4 med. Gala or Golden Delicious apples, peeled, cored, cut into 1/3" pieces
3/4 c. brown sugar (packed)
2 lg. Eggs
2 T. milk
2 t. sugar
1 9" doily
powdered sugar


Preheat oven to 375 degrees F. Butter 9" diameter spingform pan with 2 3/4" high sides. Sift first 5 ingredients into large bowl. Rub in butter until mixture resembles coarse meal. Mix in apples and brown sugar. Whisk eggs and milk together; stir into apple mixture (it will be thick). Transfer to pan. Sprinkle with sugar. Bake cake until golden and springy to touch, about 35 min. Cool slightly on rack. Cut around cake to loosen; remove pan sides (can be made l day ahead). Cool. Wrap tightly; store at
room temp.) Place doily atop cake. Sprinkle powdered sugar over, remove doily.
