Salisbury Steak

1 pound extra lean ground beef
1/2 cup bread crumbs plain
1/4 cup onion finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup 1% low-fat milk
1 teaspoon Worcestershire sauce
1  egg white
  GRAVY
1 cup beef broth
1 tablespoon cornstarch
1/2 teaspoon dried thyme  leaves
2 1/2 ounces mushrooms, canned drained and sliced

In a medium bowl, combine all patty ingredients; mix gently. Shape into
6 oval patties, about 3/4-inch thick.

Spray a large nonstick skillet with nonstick cooking spray. Heat over
medium heat until hot. Add patties, cook 3 minutes on each side or util
browned. Remove patties from skillet; drian if necessary.

In small bowl, combine bor, cornstarch and thyme; blend well. Pour into
same skillet. Cook over low heat until mixture boils and thickens,
stirring constantly. Stir in mushrooms.

Return patties to skillet; cover and simmer about 15 minutes or until
patties are thoroughly cooked. Serves 6.

Salisbury Steak With Wine Sauce

Yield: 4 servings


4 slices of bacon
1 medium-size red bell pepper
8 oz of mushrooms sliced
1 large yellow onion sliced
1 1/2 lbs. lean ground beef
1/2 tsp. salt
1/2 tsp. cracked black pepper
1/3 c. of Burgundy (or other red wine)
1/4 tsp. dried thyme leaves crumbled



1~In a large skillet cook bacon over moderately high heat until crisp and browned, about 5 minutes. Using a fork transfer the bacon to paper towels and set aside; reserve the drippings in the skillet.
2~Core and seed bell pepper; cut it into strips. Add mushrooms, onion, and the bell pepper strips to the drippings into the skillet. Cook, stirring frequently, until crisp-tender, about 4 minutes.
3~Meanwhile, shape ground beef into four oval steaks about 3/4 inch thick. Sprinkle them on both sides with salt and pepper.
4~Transfer the vegetables to a warm serving platter, cover and keep them warm. In the same skillet, cook the beef steaks until they are well browned, about 3 minutes on each side for medium. Place thesteaks on top of the vegetable mixture, cover, and keep them warm.
5~Add wine and thyme leaves to the skillet; bring the mixture to a boil, stirring and scraping the bottom of the skillet. Pour the wine sauce over the steaks; crumble the bacon over the sauce and serve.
