SWEET POTATO POUND CAKE

1 c. butter or margarine, softened
2 c. sugar
4 large eggs
2 1/2 c. cooked mashed sweet potatoes (about 2½lbs. sweet potatoes)
3 c. all-purpose flour
2 t. baking powder
1 t. baking soda
1 t. ground cinnamon
1/2 t.ground nutmeg
1/4 t. salt
1 t. vanilla extract
1/2 c. flaked coconut
1 c. chopped pecans
Preheat oven to 350 degrees. Cream butter in
large bowl. Add sugar gradually, beating well.
Add eggs, one at a time, beating well after each
addition. Add sweet potatoes, beating well.
Combine flour, baking powder, baking soda,
cinnamon, nutmeg and salt in large bowl. Add
flour mixture to the creamed mixture gradually,
beating well after each addition. The batter will
be stiff. Stir in vanilla, coconut and pecans.
Spoon batter into a well-greased 10" tube pan.
Bake for 1 hour, 15 min, or until the cake tests
done when a wire cake tester is inserted in the
middle. Cool in pan for 15 minutes. Remove from
pan; let cool completely.
