Tomato Pie

2 med. firm tomatoes
9" deep dish pastry shell
3 tbsp. margerine
1 cup chopped onion
1 cup diced green pepper
1 1/2 tsp. salt
1/4 tsp. pepper
3/4 cup milk
1 clove garlic minced
4 eggs
1 1/2 cups shredded cheddar cheese
Slice tomatoes set aside. Prick pastry with fork & refrigerate for 10
minutes. Bake in preheated 450 degree oven about 8 minutes until golden
brown. Melt butter in skillet, add onions, peppers and garlic. Saute for
5 minutes. In bowl, beat eggs, add milk, cheese, salt, pepper and sauteed
vegetables. Arrange tomato slices in pie shell and pour egg mixture over.
Bake in 325 degree oven about 50 minutes. Let stand at room temp. for 5
minutes before cutting. I also put a drip pan under while cooking.
