Tropical Fruit Salad with Pina Colada Dressing

1 cantaloupe
2 papayas
10 oz fresh lychees
4 kiwi fruits
For Dressing:
1 lb pineapple flesh
1/3 cup coconut milk
2 tablespoons white rum


TO MAKE FRUIT SALAD: Peel and slice all of the fruit into
bite-size pieces and toss together in a serving bowl.
TO MAKE DRESSING: Place the pineapple in a food processor
and process to a puree. Strain through a sieve. Return to
the processor, add the coconut milk and rum and process
until combined. Pour the dressing over the fruit salad and
serve.

Tropical Mango Salad

2 mangoes, peeled, pitted, and diced (about 2 cups)
2 tsp. fresh ginger juice, squeezed in a garlic press
1 T. fresh lime juice
1/2 tsp. a'rbol chile powder or cayenne powder


1. Thoroughly combine all the ingredients together in a mixing bowl.
    Yield: 2 1/4 cups
