Unity Church Potato Casserole

A recipe from my grandmother's church. Lady gave me the cookbook in 1992.

· 2 cups shredded cheddar cheese
· ¼ cup butter
· 16 ounce carton sour cream
· 1/3 cup chopped onion, or more if desired
· Salt and pepper to taste
· 6 medium potatoes, cooked and coarsely shredded
· 2 tablespoons butter and corn flake crumbs for topping


Combine cheese and ¼ cup butter in pan. Stir over low heat until cheese is
melted. Remove from heat and stir in sour cream, onion, salt and pepper.
Add potatoes, mixing gently. Pour into buttered casserole. Melt remaining
butter and add to crumbs. Sprinkle on top of casserole. Bake at 350º for 30
minutes.
