Veggie Muffins

1 (8 oz) pkg. corn muffin mix
1 egg
1/3 cup milk
1 tbsp. onion, minced
3/4 cup fresh broccoli, finely chopped
3/4 cup mushrooms, finely chopped
2/3 cup shredded cheddar cheese
1/2 tsp. salt (opt.)
Blend muffin mix, egg and milk in bowl. Fold in onions, broccoli,
mushrooms and grated cheese. Distribute the batter evenly among 12
muffin cups that have been oiled or lined with paper muffin cups.
Bake 20 minutes or until golden brown at 400 degrees.
