Wake-Up Sauce

Yield: 2 cups


      1 c  minced onion
      2    cloves garlic; minced
      1 ts black pepper
      2 tb chili powder
      2 tb corn oil
  1-1/2 c  strong black coffee
      1 c  catsup
      2 tb spicy brown mustard
      2 tb brown sugar
      2 tb Worcestershire sauce


1. Cook and stir onion with garlic and black pepper and chili powder in corn oil in a non-reactive 1-qt saucepan over medium heat. Add coffee and simmer 20 minutes.

2. Stir in remaining ingredients. Simmer 30 minutes until thickened.  Taste and adjust seasonings. Keep in refrigerator up to 5 days.

TEXAS TIP: This mop/basting sauce is full of flavor from coffee and spices.  It makes a good topping for a breakfast of country ham and eggs.
