New Waldorf Salad With Dried Cranberries

1/2 cup mayonnaise
1/2 cup plain yogurt
1/2 teaspoon curry powder -- optional
1/4 teaspoon granulated sugar
1/4 teaspoon salt
freshly ground pepper
3 cored diced Granny Smith apples
3 cored diced Jonathan apples
2 cups chopped pecans
3 ribs celery -- thinly sliced
1 cup dried cranberries or sour cherries
Mix mayonnaise, yogurt, curry powder, sugar, salt and pepper to taste in
small bowl. Cover; refrigerate up to 2 days ahead. Combine apples,
pecans, celery and cranberries in large bowl. Pour dressing over apple
mixture. Toss. Refrigerate until serving time, up to one day ahead.

Georgia Waldorf Salad

Yield: 6 servings
5 apples,medium-sized
1 tb lemon juice
1 c celery,diced
1/2 c peanuts,chopped
2/3 c mayonnaise
1/4 c peanut butter
1 ds salt
salad greens
Core and dice unpeeled apples. Toss with lemon juice. Add celery and
nuts. Blend a small amount of mayonnaise into peanut butter, then
blend mixture into remaining mayonnaise. Add salt and toss with first
mixture. Serve on greens.

WALDORF SALAD

1/4 c. Mayonnaise
1/4 c. plain yogurt
2 t. Sugar
2 t. Lemon juice
2 Apples
2 lg. Celery stalks
1/2 c. chopped walnuts
In small salad bowl, combine mayonnaise, yogurt and lemon juice, to taste. Core apples, cut into bite size pieces, dice celery. Add both to salad bowl, fold in nuts. Chill up to 2 hrs. Toss before serving.
