A WORD FOR TODAY





Whoopie Pie Cakes


Preheat oven 400°

1/2c soft butter
1c sugar
1 egg
2c flour
1/2tsp baking powder
1 tsp baking soda
1 tsp salt
1/2c unsweetened cocoa
1 tsp vanilla
1c milk, add 2 tsp vinegar

Cream butter, eggs and sugar and beat until smooth. Sift all the remaining dry ingredients together. lternate dry with all liquid ingredients,and beat ntil smooth. Drop by teaspoonfuls on an ungreased ookie sheet.

Bake 7-8 min. Center will spring back when ouched. Cool on cookie rack.

FILLING

1c shortening
1c marshmallo fluff
1lb Confection sugar
pinch of salt
1tsp vanilla, or your favorite flavoring

Beat first 2 ingredients until very fluffy. About 2 min.Add salt and the sugar, continue to beat another 2 min. Add your flavoring. For that festive look, you may use food coloring in the filling.

Frost one half of the flat side of the cake with a good thickness as a sandwich, and top it with another half.

HINTS:
#1 To add that festive look, then according to the season, add food coloring in the filling.
#2 Place cakes into an airtight plasticware, or preferably wrap individually with clear or matching festive colored plastic wrap.
#3 If you tie each wrapped ends with curly ribbons to match your filling colors, it gives it that extra special touch. Nice gift for any occasion.
#4 Refrigeration is not required.
#5 May be kept frozen, but better thawed in the refrigerator.Thawing doesn't take long.
