Moulin Rouge Paris Celebation!

We have create a lavish dinner for you to enjoy, all the dishes are authentic French. We have planned a dinner of four fares (four courses). You may, of course, omit or add any if you wish. That is your wim. This menu is only a spring board for ideas!

-The First Fare-
Vichyssoise-Potato and Leek Soup

6 tablesppons unsalted butter
8 large Leeks, white part only, washed well, finely chopped
1 large Onion, finely chopped
8 med. potatoes, peeled and thinly sliced
3 pints chicken stock
3 cups milk
Salt to taste
3 cups cream
1/2 cups chopped chives

Saute leeks and onions in butter until soft and slighty colored. Add potatoes and stock and simmer for 45 minutes, or until potatoes are soft. Cool slightly, then process in a blender or food processor until pureed. Add milk and season. Cool and refrigerate , overnight. When ready to serve, stir in cream and sprinkle with chives.

-The Second Fare-
Bastille Salad for Four

1 Ripe cantaloupe, sliced into chunks
6 slices of prosciutto
I head Romaine

Vinaigrette of 1/2 Olive Oil, 1/2 Canola Oil, red wine vinger, salt and pepper
Toss together and serve in a large serving bowl.

-The Third Fare-
Tripe A L' Ancienne

1 Ib per person honeycomb beef
2 onions
3 carrots
6 cloves garlic
5 Tablespoons of Tomato paste
2 Quarts dry white wine
Bouquet garni (thyme, parsley, bay leaf)
Salt & pepper to taste

Put all ingredients together in a large pot. Bring to a boil and simmer, with the top on, for about 3 hours-or until the honeycomb beef can be cut with the dull side of a knife...Very Very Tender!!!! The beef will shrink when cooked, so one pound per person is necessary.

-The Fourth Fare-
Creamy French Silk Pie

I prepared 9" Chocolate pie crust
4 cups Chocolate Pudding
Whipped Cream
Garnis of Mint and Chocolate Shavings

Spoon pudding into pie shell, spread evenly, and put in freezer for 45 minutes. Top with whipped cream immediately before serving. Garnish with chocolate shavings and Mint sprigs, Crushed Toffee or Sliced Almonds.

The Moulin Rouge Red Dinner Party!

The Menu is so different for this party because...we tried to make all the dishes have ared tint/theme to them! So here it goes! This party set-up will have four courses.

Appetizer!

Bruschetta with Tomato, Basil, and Mozzarella

Yield: 6 servings

1 lb Ripe plum tomatoes, peeled
2 tb Extra virgin olive oil -and seeded
1/2 ts Salt
2 md Garlic cloves, minced
1/2 ts Coarse black pepper
3 tb Finely chopped fresh basil
1/4 lb Fresh Mozzarella, cut into 1 tb
Finely chopped Italian -1/2 cubes -parsley
1 medium baguetter, French or 1 sourdough or Italian bread cut into 1/2 inch slices
2 large garlic cloves, peeled
2 tbsp extra virgin olive oil
freshly ground black pepper

Dice tomatoes into 1/2 inch pieces; drain over a bowl for 1/2 hour to remove excess liquid. Combine all relish ingredients except the Mozzarella cheese in a small non aluminum bowl. Stir well and taste for seasoning. Either use an oven or grill and toast the bread pieces, just so the edges are crispy. Remove and place on serving platter. Rub the bread pieces on each side with cut edges of the peeled garlic cloves. Add cheese to the relish, spoon mixture over each baguette slice and then drizzle the final 2 tbsp extra virgin olive oil over top. Sprinkle with freshly ground black pepper and serve.

Salad!

Now for the salad, I just have a few Suggestions, hopefully everyone knows how to make a salad (or for those who don't ...um...well they now have salad's in a BAG!! OooooAhhhh!)Add any red veggie you love, there are even edible red flowers out there for garnishes! Use a Red Wine Vinagerette or...die your Ranch dressing with red food coloring...*giggles*

Main Course!
Salsa Chicken and Mexican Rice

Mexican Rice!
1 C. Long grain rice
1/2 Onion Crushed Garlic
Cilantro
Black Pepper
Canned tomatoes
3 C.Water
1 C. vegtable stock or water

Fry the rice till golden brown (this is important for the flavor). Be careful once it starts browining, it will burn quick. Traditionally you would do this in oil, but do it in a dry non-stick skillet and it works pretty good. Once the rice is golden add all remaining ingredients and cook till the liquid is absorbed and rice is done. The garlic, cilantro, and black pepper can be added to your taste. Just crush the canned tomatoes and don't add the liquid. You can add the tomatoes to your taste also. If you want it redder add paprika.

SALSA CHICKEN! Serving Size : 4

1 tb Olive oil
3 lg Garlic cloves, peeled and minced
1 1/2 c Chopped onion 1 lg Sweet red pepper, cut into small dice 1 lb Chicken breast meat (boneless, skinless) cut into 1-inch chunks
3 md Tomatoes, peeled & diced
1 sm Head broccoli, stems sliced, flowerets cut into bite-sized pieces, and steamed for 3 minutes
16 oz Canned pink or kidney beans, drained and rinsed
1 c Medium-hot salsa
1/4 c Chopped cilantro (optional)
Freshly ground black pepper(to taste)

In a large nonstick skillet or Dutch oven, heat the olive oil briefly, add the garlic and onion, and saute for 3 minutes or until they are softened. Add the red pepper and saute for another 2 minutes. Add the remaining ingredients and bring the mixture to a boil over medium heat. Stir gently, reduce the heat, cover the pot, and simmer for 5 to 7 minutes or until the chicken is just done. Check the seasonings before serving.
