Derry Clam Chowder

Derry Clam Chowder

1 13 oz. can minced or chopped clams
4 slices bacon, cooked and crumbled
5 potatoes, cooked and diced
3 tbsp. flour
3 tbsp. butter
1/2 cup chopped onion
1 cup light cream
1 can evaporated milk
milk (regular)
salt and pepper to taste

Drains clams, setting aside the juice. Add enough regular milk to the juice to make 2 cups liquid. Cook onions in butter. Stir in the clams, cream and potatoes. Add evaporated milk and the 2 cups liquid to the mixture. Stir in flour, bacon, salt and pepper. Cook to thicken.
