..::Any-kind-of-Soup Spice Mix::..

*Great meal for anytime

1 packet of powder bouillon(chicken, beef, veggie or fish)
1/4 tsp grounded allspice
1/4 tsp chopped (fresh or dried)basil
1/4 tsp chopped bayleaves
1/4 tsp grounded cloves
1/4 tsp powdered ginger
1/4 tsp grounded mace
1/4 tsp chopped (fresh or dried)marjoram
1/4 tsp chopped (fresh or dried)oregano
1/4 tsp chopped (fresh or dried)rosemary
1/4 tsp rubbed sage

Mix everything in a bowl. Sprinkle as much as you want in the water or broth or whatever your base is, while it's heating up. Add veggies, pre-cooked meat, and noodles. Cook until the veggies and noodles are done. Hope you enjoy!

..::Peanut Butter Drink Drink(shake)::..

1 Cup (approximately 3 scoops) Vanilla Ice Cream
2 Tablespoons Peanut Butter(you can add more or less depending on how much you like peanut butter, personally i add a whole jar)
1/2 Cup of Milk

Put all the ingredients together in a blender and mix until creamy. There you have a quick and simple Peanut Butter drink drink. A nice, cool, refreshing drink on a hot california day. And its oh so yum yum in the tum tum.

..::Basil Shrimp and Broccoli Stir-Fry::..

*Main Dish

1 Tbsp. Olive Oil
3/4 lb. Shelled and deveined fresh or frozen medium shrimp, thawed
2 cups frozen broccoli cuts
1 medium red bell pepper, cut into thin 2-inch strips
1/2 cup snow peas
1/2 cup fresh mushrooms
1/4 cup water chestnuts
1/2 cup boiling water
2 tsp. chicken-flavor instant bouillon granules or 2 cubes
1/4 cup cold water
1 Tbsp. cornstarch
1 tsp. dried basil leaves
1 tsp. lemon juice
1/2 cup sliced green onions
2 cups of rice

Heat olive oil in a large skillet on medium high. Add Shrimp. Stir-fry about 4 minutes or until shrimp are pink. Remove to serving dish. Add all vegetables except green onions. Stir-fry until crisp-tender.
Combine boiling water and bouillon. Stir to dissolve. Combine cold water, cornstarch, basil, lemon juice. Stir well. Cook and stir until thickened. Add green onions and shrimp. Heat until shrimp are warm.
Serve over rice.

A Spoonful of Peanut Butter and a spoonful of jelly and 2 peices of bread. Spread the peanut butter on the bread then put the jelly on top of the peanut butter then put them together. There ya have it a Peanut Butter and Jelly Sandwich.
..::Cher's Tuna Pasta::..

*Main Dish or Side Dish

1/2 pound shell pasta, cooked and drained
1/3 cup of mayonnaise, low-fat or regular
2 medium tomatoes, peeled, seeded, and chopped
2 stalks celery, minced
1 can black olives, sliced
3 tablespoons parsley, minced
12 ounces white tuna, drained
Salt, pepper, Beau Monde seasoning, to taste

To peel tomatoes, remove stem and with sharp knife make an X on the bottom of each tomato, just deep enough to cut the skin. Place the tomatoes in boiling water for 1 minute or less. Remove, dip under cold water and peel.

in large bowl, mix together pasta and mayo until thoroughly mixed. Add tomatoes, celery, olives, parsley and tuna. Season with salt, pepper and Beau Monde.
Serve cold.

..::Broccoli Rob and Pasta for Four::..

*Main Dish

1/4 cup extra-virgin olive oil
6 garlic cloves 2 good-size bunches fresh broccoli rob (rabe)
1/4 teaspoon crushed red pepper flakes 1 1/2 pounds of your favorite brand of imported Italian pasta (or pasta from the box)...Keep in mind that the pasta you buy shouldn't be too big. The broccoli rob will get lost. Something like orchietta or penne is best.

Now, you'll need a BIG pot, a medium-size pot, a cutting board, knife for chopping, a garlic press, a colander...oh and some salt and a large spoon. Fill the BIG pot with some cold water and a touch of salt. Put it on the back burner over medium heat(it will eventually boil...pretty great huh?) OK, leave that and wash the broccoli rob using the colander. When you are finished, cut the ends off the broccoli rob, about 3 inches and throw away. Cut the rest into 1 1/2 pieces. Try to use most of the leaves and try not to mess with the buds.

Peel 2 to 3 garlic cloves. Put 2 tablespoon olive oil in the medium-size pot and cook on medium heat. When the oil gets hot, press the garlic through the garlic press, let that fall into the pot, (the garlic, not the press). It will sizzle. Reduce the heat to low and add a pinch of red pepper flakes. Now, add the broccoli rob. Stir gently with your spoon, cover and cook slowly on low heat.

How's that pasta water coming? It should be boiling like crazy. Here comes the big moment. Drop the pasta in to the water (without the cardboard box). Add a little olive oil so that the pasta won't stick together. Set the timer for 8 to 10 minutes. ( I like it Al Dente side, Less is more, Get it?)

Hey! Keep checking the broccoli rob! It should turn a nice dark color. Don't let it turn light green. That's cooked too much. Maybe you should taste it and see how it is doing. Add a pinch of salt. Taste again. Here's where you might add the anchovy paste, just a drop. Don't make it too salty. Taste it again. If it's done, remove it from the heat till the pasta is ready...OK? Now take a cup of water out of the pasta pot and set it aside.

When the timer rings, or when the pasta is the texture you like it, drain and add to the broccoli rob. Toss gently. Remember that cup of pasta water? Add about 1/2 cup, a little at a time, to the broccoli rob. Don't make it too watery. If it's too dry, add a little more water but taste it as you go. Toss gently and serve with a tiny plate of crushed red pepper and a little extra olive oil on the side. This dish goes great with a salad. Enjoy!


..::Chocolate Chip Cookies::..

(Recipe may be halved)

2 cups butter
4 cups flour
2 tsp. Baking soda
2 cups sugar
5 cups blended oatmeal
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
18 oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)


Measure oatmeal and blend in a blender to a fine powder. Cream the butter and both sugars.Add eggs and vanilla; mix together with flour, oatmeal, salt,baking powder, and baking soda. Add chocolate chips, Hershey Bar and nuts. Roll into balls and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees. Makes 112 cookies.

2 tablespoons margarine, butter or spread
2 tablespoons all purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 cups milk
1 cup shredded Fontina or mozzarella cheese(4 ounces)
1 cup shredded Gruyere or swiss cheese(4 ounces)
1/2 cup grated parmesan cheese
6 cups uncooked egg noodles (12 ounces)
3 tablespoons dry bread crumbs
1 tablespoon margarine, butter or spread, melted

Heat oven to 350. Grease 2 qrt casserole. Melt 2 tablespoons margarine in 2 qrt saucepan over low heat. Stir in flour, salt and pepper. Cook over low heat, stirring constantly, until smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheeses; remove from heat. Cook and drain noodles as directed on package. Mix noodles and sauce in a large bowl. Spoon into casserole. Mix bread crumbs and 1 tablespoon melted margarine; sprinkle over noodles.Bake uncovered 20 to 30 minutes or until hot and bubbly. MMMMMMMMMMMMMMMM GOOD!!!

=====BASE====

1/2 cup Butter
1 cup Coconut
1/2 tsp Vanilla
5 tbsp White sugar
5 tbsp Cocoa
2 cup Chopped nuts
1 Egg
2 cups Graham crackers(26 cookies)crushed

=====ICING=====

4 tbsp Butter
2 tbsp Milk
2 tbsp Vanilla custard powder
2 cup Sifted icing sugar

=====TOPPING=======

2 Squares Semi-Sweet chocolate
1 tbsp Butter

Place softened Butter,sugar,cocoa,vanilla and egg in bowl. Set bowl in pan of boiling water. Stir mixture until butter has melted and is consistency of custard. Mix grahem crackers,coconuts and walnuts together. And add to cocoa mixture. Pack into 9" square ungreased pan and spread with icing. Cream butter,combine with 2 tbsp milk and 2 tbsp custard. Add to butter. Sift in 2 cups icing sugar. Spread over chocolate base and allow to harden in freezer for 5-10 min. Cover Vanilla base with 2 squares chocolate and butter melted in pan. Spread evenly over top. My boys love these bars and i think you will like them to.

(this sounds delicious!)

3 whole chicken breast, halved, skinned and boned
1 cup cracker crumbs
1/2 tsp salt
1/4 tsp pepper
1/4 tsp tarragon
7 tbl butter
1/4 cup chopped shallots (but not in Shads)
1/2 cup chicken stock
1/2 cup dry white wine
1/2 pound fresh mushrooms, sliced
2 cups seedless green grapes

Mix cracker crumbs with salt, pepper and tarragon. Lightly dredge chicken in mixture. Melt 4 tablespoons butter in skillet and brown chicken on both sides. Place pieces in single layer in shallow baking dish. Add shallots to skillet and saute until translucent. Stir in stock and wine and bring to a boil. Pour over chicken. Bake at 375 degrees, uncovered, for 30 minutes. Saute mushrooms in remaining 3 tablespoons butter. Add mushrooms and grapes to chicken. Bake an additional 8 to 10 minutes. Serve while HOT!!!

3/4 lbs. ground beef
1 16oz. can dark red kidney beans, drained
3 tsp. chili powder
1 c. chopped onion
1/2 c. chopped Green, Yellow, Red, & Orange Peppers
1/4 tsp. crushed black pepper
1/4 tsp. salt
2 cloves garlic, minced
1 16 oz. can tomatoes, cut up
1 8oz. can tomato sauce
1/2 tsp. dried basil, crushed

In a large saucepan cook ground beef, onion, peppers, and garlic till meat is brown. Drain fat. Stir in undrained tomatoes, kidney beans, tomato sauce, chili powder, basil, salt, and black pepper. Bring to boiling; reduce heat. Cover; simmer for 20 minutes. Serve over rice. Makes 4 main-dish servings.
