  • Rum Chocolate Mousse

    Mousse Ingredients

  • 1 cup Heavy cream
  • 2 # Bittersweet chocolate chips
  • 12 Egg whites
  • 5 cups Heavy cream, whipped
  • 1 cup Extra Virgin Olive Oil
  • 2 Tablespoons Rum (more to taste)
  • Coarse sea salt



    Mousse Preparation 1) Melt chocolate in bain marie. Whisk in extra virgin olive oil, then heavy cream. Set aside to cool.
    2) Beat whites to soft peaks. Add 2 cups of mousse ganache to whites and incorporate, then add mixture back into the ganache.
    3) Whip cream to soft peaks and fold into chocolate mixture. Set aside to cool, place in pastry bags for service.

    To Plate With piping bag, pipe mousse into small chilled bowls. Drizzle a circle of whipped cream around the dessert, garnish with coarse sea salt on chocolate and a drizzle of extra virgin olive oil.
