4 Chix breasts
2 T oil
2 T Butter
1 c Flour
4 lg Eggs
1/4 c milk
1 sm jar favorite sauce
1/2 lb sliced Pepperoni
1 1/4 c red wine
4 c Shredded Mozzarella
1/4 c black olives


  • 1) Cut pepeeroni into 1/4 pieces
  • 2) Sweat pepperoni in med pot, after oils are drawn out of pepperoni add 1 cup red wine cook 3 mins. and add sauce ,heat to boil then lower to simmer
  • 3) Make eggwash, wisk eggs and milk together
  • 4) Dredge chix in flour
  • 5) Heat oil and butter in satue pan
  • 6) Dip floured chix in eggwash and place in hot oil & butter
  • 7) Brown chix on one side, flip and add olives, cook 2 mins. and add 1/4 red wine,cook another 4 mins
  • 8) Place Chix in backing dish, spoon sauce over chix, cover with mozzarella chesse and bake untill chesse is melted

    For Different tastes add Satued Green Peppers and Mushrooms
