Ginger Peach Pork Loin

Ginger Peach Porkloin


A gingery rub teams up with a lightly sweet-hot glaze for this oven-baked pork tenderloin.


  • 1 teaspoon olive oil
  • 1 (1-lb.) pork tenderloin
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons peach preserves
  • 1 teaspoon lower-sodium teriyaki sauce
  • 1/8 teaspoon crushed red pepper


  • 1) Heat oven to 400°F. Heat oil in large nonstick skillet over medium-high heat until hot. Cook pork 5 minutes or until browned on all sides. Place on foil-lined small rimmed baking sheet. Rub garlic and ginger over pork. Bake 15 minutes.

    2) Meanwhile, combine all remaining ingredients in small bowl. Spoon half over pork; bake 5 minutes. Spoon remaining mixture over pork; bake 5 minutes or until internal temperature reaches 145°F. to 150°F. Cover loosely with foil; let stand 5 minutes before slicing.
