Pumpkin Muffins


2 cups flour
1/2 cup dark brown sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon, ground
1/4 teaspoon ginger
1/8 teaspoon nutmeg, ground
1 cup LIBBY'SŪ 100% Pure Pumpkin
1/2 cup oil
2 tablespoons honey
1/2 cup water
1/3 cup walnuts, chopped


1: In a large bowl combine flour, dark brown sugar, baking soda, cinnamon, ginger, and nutmeg. Set aside.

2: In a small bowl, mix together pumpkin, oil, honey, and water.

3: Add to flour mixture stirring until just moistened.

4: Fold in chopped walnuts.

5: Spoon into well greased muffin tins, about half full.

6: Bake in a 375 degree oven for 35 minutes, or until done.

Remove from oven. Slightly cool before transfering to a wire rack.
