Chix Razberry

  • 2- boneless skinless chicken breasts
  • 3- tablespoons Eleanor's Best raspberry jam
  • 1/2-cup flour
  • 2- Eleanor's Best farm fresh eggs
  • 1/4 cup cream
  • 3- tablespoons Brandy or red wine
  • 1- tablespoon butter
  • 1/4- cup of chicken broth
  • 1- tablespoon olive oil salt,pepper
  • fresh raspberry, to garnish (optional)



  • 1) Season the chicken with salt and pepper to taste.
    2)mix eggs and cream and beat,dredge chicken in flour,dip chicken into eggwash.
    3) In a skillet, heat the oil and melt the butter and saute the chicken over medium heat.
    4) Cook until the chicken is cooked through, Remove from burner and Add the Brandy, return to heat and flambee
    5) Add jam and chicken stock to the pan and stir. Boil for a few minutes; turning the chicken in the sauce.
    6)Can garnish with fresh raspberries and serve.

    Recipe Alternative
    Chix Jannine

    Replace Razberry for Peach and add 1/8 teaspoon ginger to recipe
