Citrus turkey salad

2 c diced cooked turkey
3 T olive oil
1/2 T each lemon zest lime zest orange zest
Half diced red pepper
1/2 c diced cooked butternut squash
1/2 c cooked corn
1/4 c sliced green onions
1/2 c diced green apple
1/2 c pecan pieces toasted
2 jalapenos peppers seeded
2 T
2 minced fresh T thyme
1 T minced fresh sage
2 or 3 diced avocados
Green salad
1/2 c carrot chile lime dressing

1) Combine olive oil and zest in a small bowl marinate dice turkey in this mixture for 1 hour
2)Toss all salad ingredients except avocado and let flavors mix 30 minutes
3)Serve over salad greens topped with avocado slices

Carrot chili lime dressing
4 carrots cut in half
1 T olive oil
1 t minced garlic
1 New Mexican chili seeded
1 anchoc chili seeded
3 c chicken stock
3/4 c sour cream
1 T lime juice
2 T chopped fresh cilantro
1 T honey
Salt to taste

1)saute carrots have an olive oil over medium heat until lightly browned
2)add minced garlic and chilies and continue to saute 3 minutes
3)Add chicken stock and bring to boil , simmer about 45 minutes until carrots a soft
4)Place carrots in blender add sour cream lime juice cilantro honey and salt puree until smooth
