Quebec Pot Roast

 

Place beef and lard in a heavy kettle or large pot and boil for 2 hours. Add cabbage, turnip, celery, onions, potatoes, salt, pepper and bay leaf.

Simmer 1 or 2 hours longer. Serve meat in the middle of a dish with the vegetables around.

 

Beef Carbonade

 

Melt butter and brown meat (salted and peppered). Brown onions. Add the other ingredients. Bring to a boil, stirring. Add meat, cover and cook on medium heat for 1 1/2 hours.heure.

 

Beef Burgundy

Coat meat with dry ingredients. Sauté onions in oil. Add meat and brown 5 to 6 minutes. Add wine and broth and simmer 1 hour. Add carrots and simmer 1 hour more ond medium heat, stirring from time to time.

Beef-Cabbage Casserole

  • 1 cabbage cut in 1-inch slices
  • 2 lb ground beef
  • 4 chopped onions
  • 1 28-oz can tomato sauce
  • Brown ground beef and onions. In a casserole dish, place one layer of ground beef and onions, one layer of cabbage, and then pour some tomato sauce on top. Add a second layer of ground beef and onions, a second layer of cabbage and pour the rest of the tomato sauce on top. Cover and bake at 350° for 2 hours.

     

    Meat Loaf

  • 1 1/2 lb ground beef
  • 2/3 cups carnation milk
  • 1 egg
  • 1/2 cup soda cracker crumbs
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dry mustard
  • 1/4 cup chopped onion
  • 1/2 cup chopped green pepper
  • Mix all ingredients and bake at 350° for 1 hour.

     

    Beef Stew with Wine

  • 1 1/2 lb stewing beef in cubes
  • small whole onions
  • 1 can tomato juice
  • red wine
  • carrots
  • potatoes
  • flour
  • salt and pepper
  • 1/2 cup water
  • Coat meat with flour, salt and pepper. Brown in oil. Add water, tomato juice, onions, carrots and potatoes. Cover with red wine. Cook on low heat and stir often.
