Chicken

 

Honey Chicken

Mix first four ingredients. Dip chicken in orange juice and coat with breadcrumbs. Place in a casserole dish. Bake 30 minutes at 350°. Mix broth with last 2 ingredients, mix until butter is melted or mixed. Pour on chicken and bake 30-40 minutes longer, basting frequently.

 

Marinated Chicken Cubes

  • 1 chicken, cut in cubes
  • 1/4 cup Catalina salad dressing
  • 3 tablespoons apricot jam
  • 4 tablespoon orange marmalade
  • 1 envelope onion soup
  • Mix all ingredients and marinate 2-3 hours. Cover with aluminum foil and bake 30 minutes at 325°. Uncover and cook 15 minutes longer. Serves 4.

     

    Barbecued Chicken

  • 1/2 cup vegetable oil
  • 1/2 cup melted butter
  • 1/2 H.P. sauce
  • 1 tablespoon soy sauce
  • 1 tsp minced onion
  • 1 clove garlic, pressed
  • lemon juice
  • 3 chickens (2 lb each) cut in half
  • Mix all ingredients to make sauce. Marinate half-chickens in sauce at least one hour. Cook on barbecue at highest level or in the oven under the broiler, about 7-10 inches from heat.

    Baste often and turn chicken.

    Barbecue 40-50 minutes.

     

    Haitian Marinade

  • 1 egg
  • 1 cup flour
  • 1 1/4 cups milk
  • 1/2 minced onion
  • 5 tsp tabasco sauce
  • 1 tsp relish
  • salt and pepper
  • leftover chicken or one can shrimp
  • Place all ingredients in blender and whirl until texture of thick pancake batter.

    Deep fry by spoonfuls (ice cream spoons) until golden and crunchy.

    Serve with rice.
