Recipe by Sammi(Pennsylvania,USA)......PUFF PASTRY BAKE
2 sheets of frozen puff pastry
1 small bunch of broccoli
¼ cup cheddar cheese
¼ cup mozzarella cheese
melted butter
Thaw puff pastry. Blanch broccoli with a pinch of salt. Brush first sheet of puff pastry with butter, add broccoli and cheeses. Brush second sheet of puff pastry with butter. Place on top of first and filling. Seal all edges. Brush top with egg wash. Bake at 400 degrees for 15 - 20 minutes.
Variation:
Use a combination of meats and cheese and back as above. Pepperoni, boiled ham and turkey work well. ENJOY
CHERRY-NUT FRUITCAKE
Recipe submitted by Janice (JEM's Wife) (North Dakota,USA)
2--Greased 9x13 loaf pans, lined with aluminum foil then regreased
(allow for a 2" overhang)
Sift into a large mixing bowl: 1.5 cups of sifted all-purpose flour
1.5 cups of sugar
1 tsp. of baking powder
1 tsp. of salt
Add to the flour mix and toss until coated, the following:
6--10 oz. jars of Marachino
Cherries
1--20 oz..can of Pinapple
Tidbits
18 oz. of walnuts and / or
pecans
In a separate bowl, beat 6 eggs until thick, then blend in a half cup of
rum (optional)
Pour over fruit mixture and toss till thoroughly mixed. Scoop into
prepared loaf pans, pressing
mixture with a spatula to pack tightly.
Bake at 300 degress for 1.75 hrs.or until wooden toothpickinserted into
the center of loaves comes out "clean". Remove from baking rack and
allow to cool 15 min. before removing loaves from pans. Peel off foil,
and while still warm, brush loaves with a half cup of Corn
Syrup. Cool thoroughly before serving or storing.

Health Salad.....
Ingredients---
Broccoli
Cauliflower
Red Onion
Fresh Mushroom
Green Bell Pepper
Black Pepper
Ranch Dressing
Cut the Broccoli and Cauliflower in bite size or larger pieces...
Chop the Onion, Mushrooms, Green Bell Pepper in pieces........DO NOT SLICE.....
Combine all in a Serving Bowl, add Black Pepper to your taste (MY TASTE IS ALOT OF BLACK PEPPER)
Add the Ranch Dressing to your Liking and individual Taste......with a large Spoon, mix all together,
This is best done before serving and left to marinate in refrigerator for awhile...........Mix again before serving...

PREPARATION: Mussel Recipes Sent in by Paul* (Belgium, Europe)
Put the mussels in a bowl or a bucket. Pour cold water over them and
firmly stir them with a stick
Put them in another bucket and squeeze them one by one between
tumb and finger. The bad ones will now open.
Throw them away.
With a sharp knife : remove the "beard" and the grey crust on the
shells.
Wash them 2 or 3 times in water.
Of Course u can buy them prepared.
RECIPE 1 : just cooked
You will need
1 to 1,5 kg mussels per person.
1 caserole per person
onions, parsley, celery, salt and vinegar.
Prepare the mussels as above.
Put the vegetables in the caserole : some onions cut in big pieces, a lot of parsley and some
celery.
Put the mussels in together with a soup spoon of salt. If you like it you can put a little bit of
vinagre over them too.
Add a VERY LITTLE bit of water. Put the lid on the caserole and let cook on a slow fire
until the mussels open (5-10 minutes).
Shake them now and then.
Serve in the caserole with bread or fried chips (belgian chips of course.)
If u like u can add other vegetables like tomate, carrots....
RECIPE 2 : Mussels on wooden shoes (mosselen op klompen)
(Dedicated to my friend Knight of NL)
For 4 persons you need about 3kg mussels, oil, 2 onions, leek, carrots, some garlic, pepper,
salt, 1/2 kg ripe cheese.(DUTCH cheese),
anchovy, tomato.
Prepare the mussels.
Cook them in water and get them out of the shell.
Cut leek, carrots and garlic in very fine pieces.
Heat the oil and let the onions get colored (if they turn black they had too much).Then add
the cut vegetables and the mussels.
Let stimmer for a few minutes.
Take a heat resistant bowl. Put in a layer of mussels, then cheese, mussels cheese...
Let the cheese melt and give it a color in the oven.
Ifyou like you can finish this with anchovy and pieces of tomato.
WELSH COOKIES --- SUBMITTED BY SAMMI * (Pennsylvania, USA)
1 cup butter or margarine
1 ¼ cups sugar
4 cups flour
pinch of salt
2/3 cup sour milk
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon nutmeg
2 eggs, beaten
Powdered sugar
Cream margarine, salt and sugar. Sift together flour, baking soda, baking powder and nutmeg. Add eggs to sugar mixture and combine well. Add milk and flour mixture alternatly. Add additional flour, if necessary so that dough can be rolled. Roll to ¼ inch thick, cut into desired shapes. Bake on griddle or electric frypay set at 350 degrees until both sides are golden brown. Shake in powdered sugar immediately. GREAT ON A HOT SUMMER DAY. NO OVEN NECESSARY!!!!!

Pasta ala Stella (New York, USA)
Linguine
Brocoli heads
Mushrooms
Onions (I used Purple)
Bell Peppers
Garlic
Black Pepper
Preparation - Boil the Linguine in separate Pot.....Slice the Mushrooms, Onions, Bell Peppers and crush the garlic (use garlic sparingly here one clove should do). ADD the Onions, Bell Peppers, Mushrooms to
a large saucepan, you may use a tablespoon of LOW FAT Margerine for additional flavor, now add the black pepper to your taste (again my taste is lots of black pepper) on mediumflame, add the brocoli heads in when the vegies look almost done, and cook on low flame for couple minutes or until brocoli is tender... Drain the Linguine (or Pasta of your choice) add the pasta to the vegie mixture, toss and mix
add some Parmesano Cheese of good quality....Again according to your taste...
Serve and Enjoy this dish with a Tossed Salad, and Garlic Bread if you wish......
You May leave Mushrooms out or the Brocoli if you care to....it is still a great HEART HEALTHY
Non-Cholesterol dish...Also an inexpensive dish to prepare, but filling to your tummy......Enjoy this

KOURABIDES -*greek cookie* - From A Magazine Recipe.....
Yields approx. 50 or so cookies
1 lb. Sweet butter,
1 cup confectionary sugar
2 egg yolks
½ oz Cognac (brandy)
1 tbsp baking powder
4 cups flour
Microwave the butter until soft, though not melted….Beat butter and sugar thoroughly
In a bowl. Add the egg yolks and beat further.. In a separate bowl or cup, mix the
Cognac and baking powder together, Add the cognac/baking powder mixture to the
Butter and sugar.
Next, add the 4 cups of flour to the mixture. The dough created by this should be soft
Roll the dough into a tube, approx. 1 ½ inches in diameter. Cut the tube into even slices,
Approx. 1 inch wide. Place each slice of cookie dough onto a cookie sheet covered
With wax paper. Slices should be [laced at the least 1 inch apart from one another. Push a light
Indentation into the middle of each cookie with your finger…Remove Wax paper before
You bake in a 350 oven for 20 to 25 minutes.
When baking is finished, let cookies cool until warm. Sprinkle a coating of confectionary
Sugar over each one…The cookies will cool off very quickly, so be sure not to let them get cold
Before covering with the sugar.
SATE BABI ---Recipe by Knight of NI (Netherlands)
Ingredients:
2 lbs. pork meat
Wooden sticks (keep them 15 minutes in water so they don't burn on your barbecue
Marinade:
2 tablespoons Olive oil
2 tablespoons Lemon juice or vinegar
4 tablespoons soy sauce
1 tablespoon ketchup
salt and pepper
2 teaspoons sugar
a bit of salt and pepper
1 teaspoon coriander
1 teaspoon ginger
3 teaspoons sambal (or REALLY hot chili pepper)
Cut the meat in cubes and marinade them (with the marinade ingredients)
and the salt and pepper. Wait for an hour or 2. Put all the cubes on wooden
sticks and lets barbecue them.
But you'll also need my special sauce with this barbecue recipe:
SO NOW GET READY FOR:
SATE SAUCE:
You will need
1teaspoon peanut butter
1teaspoon soy sauce
1teaspoon ketchup
½ teaspoon vinegar
2 teaspoons sugar
1/2 spoon full with fried chopped onions
1 teaspoon sambal (or really hot chili sauce)
Garlic
Put all ingredients in a casserole, cook it and include ONLY water to
get the right thickness off the sauce and than put some garlic into it
just enough as you like it to be.
SERVING TIPS:
As this is a spicy dish you probably like to add just boiled rice and some cold salad with it (sliced cucumber + a bit of vinegar oil salt pepper mustard (mustard in french) and a bit of garlic).
BURNING HINTS:
The more sambal (or hot chili sauce) you put in the warmer face you
will get while eating. To cool off: my best HINT is NEVER drink
anything SWEET: it will only get you hotter and hotter. Pepsi and
Cola are flame throwers, just drink a simple cold ice tea with no sugar in
it.
§tar's Bread (New York, USA)
5 lbs Flour
¾ cups granulated sugar
1 stick margerine
1 cup milk
5 cups water
2 packs yeast.
Combine all dry ingredients, mix well………put all wet ingredients into saucepan
Warm being sure the margerine has melted.
Put yeast in cup with 1 tbs sugar, add 2 tbs of the warm liquid to the yeast and sugar
Stir once or twice, set in warm place to rise to about a cup in volume.
Pour the wet ingredients into the dry mix, and mix well, when yeast is ready add to the
Dough mixture, mixing with with hands…turn the dough onto the board or counter
Making sure it is well floured first….work the dough well, cover the pan with dough in it,
Place in warm place to rise, until the dough is twice the size you started with.
Punch the dough down, and mix again, with hands, work the dough with hands,
then place in indiviual pan And let rise again, bake at 325 º for 35 to 45 minutes.
Christmas Cookies

Makes 30
3/4 cup sweet butter (at room temp) Optional for decorating:
1 1/2 cups powdered sugar Colored fondant and small
1 egg decorations
1 egg yolk
1 teaspoon of vanilla extract
grated rind of one lemon
1/4 teaspoon of salt
2 1/2 cups of all-purpose flour
Preheat the oven to 350 F. With a electric mixer, cream the butter until
soft. Add the sugar gradually and continue beating until light and fluffy.
Using a wooden spoon, slowly mix in the whole egg and the egg yolk. Add
the vanilla extract, lemon rind, and salt. Stir to mix well. Add the flour
and stir till blended. Gather the mixture into a ball, wrap in wax paper,
and chill for 30 minutes.
On a floured surface, roll out the mixture about 1/8th" thick. Stamp out
shapes or rounds with cookie cutters. bake until lightly colored, about 8
minutes. Transfer to a wire rack and let cool completely before icing and
decorating, if wished.
Lollipop's Famous Clam Chowder (Washington State, USA)
Get two 6 1/2 oz cans of chopped clams or fresh ones if you got them, drain
the liquid in a two cup measuring cup. Add enough liquid to make two cups. Set this aside. Next in a pan that your gonna cook the chowder in, fry
about 2 or 4 slices of bacon (or salt pork) bacons best. Do this till
crisp; remove bacon and set aside. Add the clam liquid, 4 potatoes diced
up, and a half of onion chopped up. Cook until the potatoes are the way
you like them. We like ours kinda hard. Stir in the clams, two cups of
milk and one cup of light cream. Stir 1/2 cup of milk into 3 Tbls of
flour, and stir into chowder. Cook and stir till bubbly, cook one minute
more. Add a couple of shacks of worcestershire sauce, salt to taste and
about five shakes of pepper. Sprinkle the bacon on top and eat!
Stella's Kielbasi Recipe - good for crowds and cheap to make……
Kielbasi Picnic Style (New York, USA)
2 RINGS of Kielbasi (either Beef or Turkey Kielbasi)
Sweet Onions
Green Peppers
Mushrooms (fresh or canned)
Black Pepper
Slice up the Kielbasi……onions and green peppers………(put onions and peppers on the side)
Begin by slicing Coin sizes out of kielbasi…….and fry them till slightly browned.
Add the onions, peppers, mushrooms, sprinkle black pepper.
Cook together until tender………..
Yummy………..serve with hoagy rolls……………..enjoy them from my Kitchen to Yours.

Magic Cookie Bars
1\2 cup[1 stick] margerine
1 1\2 cups graham cracher crumbs
1 [14 oz] eagle brand, sweetened CONDENSED, not evaporated milk.
1 cup [6oz] semi-sweet chocolate chips
1 1\2 cups of flaked coconut
1 cup chopped nuts.........
Preheat oven to 350====325 for glass dish.
In 13+9 inch pan melt butter in oven.
Sprinkle crumbs over butter, pour milk evenly over crumbs.
Top with remaining ingredients, press down firmly with fork.
Bake 25 minutes or until lightly browned...cool
Chill if desired. Cut into bars, store at room temp. [cover]
Varation??/add 1cup[6oz] butterscotch flavored chips after chocolate chips
Prep time 10 min, cooking time 25, cool on rack!! Can wrap each piece in
saran wrap.Kids lunch, no spoilage. Cal count?

Granny's Sweet Potato
3 cups grated sweetpotato[RAW}
1 1/2 cup sugar
3 whole eggs beaten
1 small can pineapple
1 tablespoon flour
1 stick melted margarine
1 cup coconut [shredded]
Combine all ingredients in a 2 quart casserole, mix well...>Bake at 350* for 45 minutes. Stir once during cooking.
If top browns to quick? cover with foil, remove last few minutes of baking
for crusty top

PENNETTE -Macaroni
TOMATOES"PELATI" 2 small cans
White onion medium siz
olive oil(extra virgin is better)
MOZZARELLA cheese(really italian)
PARMESAN cheese
BASIL 4/5 leafs
salt and pepper
First time you have to prepare the tomate sauce:
put the oil into the pan with the onion(chop very thin), when the onion
start to became brown(START not when is all ready brown) pour the
tomatoes,salt pepper and 1 glass of water:
Let boil for about 15 minutes,when the sauce miss the water turn off the
fire,put the basil,taste if it is little acid put one tea-spoon of sugar,if
necessary put more salt,
now tomatoe sauce is ready.
It's time to cook the pasta:
you need a big sauce pan(4/5 lt.of water)
Salted-water start boil(not before) put the pasta(usually cook in ten
minutes but check the packing).
Drain the pasta and put in a ball ,mix together tomatoe sauce,mozzarella
cheese(chop in small cubes)
Turn on the oven(180 put all in a buttered-saucepan:parmesan cheese and
pieces of butter
on the top.
When the cheese is melted you can serve it

1 cup of Turkey pieces
2-ready made pie crusts (NOT Graham Cracker)
1-can Mushroom soup
1 can Chicken soup
1 small can of Mushrooms
1/4 cup of cut-up partially cooked carrots
2-cut-up partially cooked potatos
1/4 cup of thawed frozen peas (Not canned)
1/2 tspn Minced Onion
Bake the bottom pie crust for 15 min.
Mix all ingredients, place in bottom crust
Place the 2nd crust on top and seal the edges
Bake for 45 minutes at 375
