OVEN FRIED CAJUN CATFISH
Looking for a tasty way
to make
fresh fish? This recipie is great! You
can use any
type of fish Except possibly Salmon. I
think a mild
white fleshed fish would work best.
Personally I
love catfish and have only used it when
I have made
this recipie. It is not a LOW FAT
recipie, but it is
a reduced fat way of having fried fish!
Note to keep
the fat content down if using catfish( a
fatty fish)
serve with steamed rice and a green
vegetable:
SEASON MIX:
1 1/4 tsp. garlic powder
1 tsp salt
1 tsp onion powder
1 tsp dried sweet basil
1/2 tsp paparika
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp oregeno
1/2 tsp cumin
1/8 tsp cayenne pepper
INGREDIENTS
4- (4-5 oz fillets of fish)
1/2 cup toasted bread crumbs
2 TBS chopped fresh parsley
3- TBS finely chopped green onions
1 TBS olive oil
PREPARATION
1)combine all spices into a season
mix
2) Sprinkle all surface of the fish with
4 tsp. of
the season mix.
3) Preheat oven to 450f
4) combine Bread crumbs, parsley,green
onions & the
remaining season mix. Add the oil and
mix it in with
your fingers, untill the crumbs are
moist
5) Dredge the fillets through the bread
crumbs one
at a time, gently pressing down on each
side. Shake
off any excess crumbs. Place skin side
down on a
baking sheet.
6) Cook 6 min in oven, flip over and
cook 6 more
min., flip one last time and cook 4 more
min. Serve
immediately!!!!
This is so spicy and wonderful! A little
white wine
goes well with it also.
