BUFFALO
CHICKEN
WINGS
One Night in
1964 the
owner
of a downtown bar was making a late
night snack for
a few customers. Having just made soup,
she had a
large pile of chicken wings left over.
The rest as
they say is History!! Once taking the
Buffalo area
palate by storm, the chicken wing has
gone on to
become one of America's favorite snack
items. I
shudder to think how many of these tasty
treats I
have prepared as a chef in the Buffalo
area. Not to
mention the Thousands I have eaten over
the decades.
So here for all you late night munchers
is the
"traditional" recipie for Buffalo Hot
Wings
INGREDIENTS
20 Full wings
1 stick Real
Butter
"Franks Hot
Sauce"( or any lousiana Cayenne pepper
sauce)
Oil
for deep
frying
PREPARATION

br>1) Cut the wings at the middle joint,
and remove
the tips.
2)Heat deep fryer full of
oil to
375°
3) Parboil wings for 10
min.(This will give
you the crispy wings found in
restraunts)
4)Melt
the butter
5) Add hot sauce to the
melted butter
to make the sauce. **NOTE** Exact
mesurement is not critical. A medium
hot sauce will
be a shade of orange like French
dressing. The
deeper the color, the HOTTER the wings.
For Very
HOT wings use LOTS of hot sauce!!!
6)
Deep fry
wings in hot oil for 10-15 minuets or
until
crispy.
7) Place wings in a pot with
a tight
cover, add some of the sauce, and shake
with the lid
on the pot.
8) Serve with celery
sticks & Carrot
sticks. Blue Cheese dressing is the
traditional
condiment. Dip the wings in the
Dressing and ENJOY
with your favorite Cold
beverage.
