French Onion Soup
 
 
 
4 tbsp salad oil
4 Tbsp butter
4 Medium onions
1 and a half Tsp salt
1 Tsp Thyme
1 Tsp oregano
2 Bay leaves
1 Tsp black pepper
2 Tbsp flour
4 cups Consomme
2 Tbsp grated Parmesan cheese
French bread cut into 1 inch slices
Mozzarella cheese
Parmesan cheese grated
 
 
1) Heat oil and butter in a large pan until mixture begins to smoke.
2) Add sliced onions, seasonings. and flour. Cook until brown.
3) Add Consomme and the 2 tbls Parmesan cheese. Simmer at least 10 minutes.
4) To serve, ladle into individual casserole. Top with french bread. Sprinkle with grated Mozzerella and Parmesan cheese.
5) Bake until golden at 375  
 
 
 
Kayleigh's Scallop Surprise
(Coquilles St. Jacques with a twist)

 
 
1/2 cup sherry
1&1/2 cup water
1 lb bay scallops
1/2tsp salt
1/8 tsp pepper
1 med. onion
1 tbsp parsley
2&1/2 tbsp butter
juice of 1/2 a lemon
1/2 lb. mushrooms
2 tbsp flour
1 cup heavy cream
1/4 cup parmesan cheese
bread crumbs and parmesan cheese for topping
 
 
1) Bring sherry and 1/2 cup of water to a boil, in a med. sauce pan.Add scallops ,salt and pepper. Poach 5-7 min.
2) Remove scallops to a casserole dish. Save poaching liquid.
3) Saute onions and parsley in 1/2 tbsp butter for 5-8 min.
4) Boil remaining cup of water add lemon juice and mushrooms. Simmer for 5 min and drain.
5) Melt remaining butter, add flour, stirring constantly and cook for 1-2 min. With a wisk, blend in poaching liquid, cook untill sauce thickens.
6) Add oinions, parsley, mushrooms,1/2 cup parmesan cheese and hot cream.
7) Pour over scallops, sprinkle with bread crumbs and parmesan cheese on top. Cover and refridgerate or bake immediately
 
Bake at 375 for 20 min. serve over top of hot buttered egg noodles
 
 
 
 
Crab Meat Salad with Rice

 
 
1 pkg. boil in bag rice (about 2 cups cooked rice)
1 lb. crab meat
2 ribs celery chopped
Mayonaise or Miracle Whip
1/2 tsp Dill Weed
 
 
1) cook the rice.
2) rinse off the crab meat.
3) mix rice, crab meat and celery togeather. Add enough mayonaise to your likeing.Add the Dill Weed. Serve chilled
