Chocolate Peanut Butter Bars
This is actually a combination of two recipes. The filling is Clare's
recipe for "Peanut Butter Balls." The second part is "Lynne's Chocolate."
Filling:
4 Tbsp. chocolate protein powder
3 Tbsp. peanut butter
1/2 tsp. liquid sweet n' low or 1-2 pks artificial sweetener
1/2 tsp. vanilla
1 tbsp. water
Mix ingredients together. You may need to add more water if not the
right consistency. Press into plastic wrap lined small square container.
Freeze until firm.
Coating:
1 oz. cocoa butter or 1 oz. unsalted butter
3 tbsp. cocoa plus 1 tbsp. butter OR
1 oz. unsweetened chocolate
6 pks. artificial sweetener
4 tbsp. heavy cream
1/2 tsp. vanilla
Melt butter (and chocolate if not using cocoa powder).
Mix in cocoa and additional butter. Add AS and stir until
well mixed. Add cream, 1 tbsp. at a time until mixture is smooth.
To Make Bars:
Remove filling from freezer. Cut into small bars. Using fork
gently lower bars into coating mixture. After coating bars, place on
wax paper lined plate. Any coating that remains after dipping can be
poured into plastic wrap lined container and either frozen or refrigerated
until firm. Bars can either be frozen or refrigerated until firm. I prefer
frozen because when they were just refrigerated, the filling was a little
watery.

Coating: 13g
