Chicken Pinwheels
6 slices ham
6 slices swiss
6 boneless chicken breasts
toothpicks
1 tbsp. olive oil
1 tbsp. butter
1/2 cup chicken broth or bouillion
Heavy cream
Pound chicken breasts with mallet to 1/4 -inch thick.
Place slice ham and swiss on each chicken breast. Roll
up and secure with toothpicks. Heat oil and butter in
nonstick skillet over medium high heat. Cook chicken
pinwheels 5 minutes per side or until brown and slightly
opaque. Add chicken broth and simmer 5 more minutes
or until done.
Remove chicken from pan. Add splash heavy cream and
simmer for a few minutes. Return chicken to pan to
coat with sauce.
