Marinated Beef

1 lb. stew meat
2 Tbsp. lemon juice
4 cloves garlic, minced
1 Tbsp. oregano
2 tsp. salt
1/2 cup olive oil


Mix olive oil, lemon juice, garlic, oregano and salt.
Pour over stew meat and let marinate in fridge for a
few hours, stirring occasionally.

Place stew meat pices on rack over jelly roll or other
low-sided pan. Roast at 375*F for approximately 30
minutes, depending on size of pieces.

Optional: sprinkle extra salt and oregano over pieces
before roasting.
