Stevia as a Sweetener

Artificial Sweeteners
(From the Journal of the American Dietetic Assn., May 1998 issue)

Saccharin (Sweet and Low): exceeds the sweetness of sugars 200 - 700 times. It provides no energy (calories) as it is not metabolized. This product is heat stable so you can bake with it.

Aspartame (Nutrasweet): 160 -220 times the sweetness of sugar. It only provides 4 cal/gm, thus the amount of energy derived from it is negliglible and not worth counting. It is a general purpose sweetener mainly used in dry goods and beverages. It breaks down with heat exposure and therefore you can not bake with it.

Acesulfame-K: developed in 1967 and is approximately 200 times sweeter than sugar. The "K" refers to potassium. This sweetener is not metabolized by the body and does not provide any energy (calories). It can withstand high temperatures, so you can bake with it. That is why it is sold to food manufacturers (marketed under the brand name Sunett). It is calorie free and found mostly in dry mixes, baked goods, gum, etc. It is safe for diabetics to use should you see it on a label.
